Cafe Rio Mexican Grill is a popular chain of fast-casual restaurants known for its fresh and flavorful Mexican cuisine. Founded in 1997 in St. George, Utah, Cafe Rio has since expanded to multiple locations across the United States. It recently opened a new dine in, drive through and delivery eatery at 140 Highbrook Way, Star, Idaho.  The restaurant's mission is to provide customers with a unique and high-quality dining experience by offering made-from-scratch Mexican dishes in a vibrant and inviting atmosphere.

Project Solution


RRC Contractors offered Design Build services to Cafe Rio to help them build their new Restaurant. Key activities included the following:

Initial consultation took place between Cafe Rio and RRC Contractors. During this meeting, representatives from RRC Contractors discussed Cafe Rio's vision, goals, budget, and any specific requirements or preferences for their new restaurant. This consultation helps the contractor understand the client's needs and objectives.

Following the consultation, RRC Contractors then prepared a proposal outlining the scope of work, estimated costs, and a timeline for the project. This proposal also detailed the Design-Build services provided. Once both parties aligned on the terms, a contract agreement formalized the partnership.

RRC Contractors assembled their design team including architects, engineers, interior designers, and other experts, depending on the project's complexity. They worked closely with Cafe Rio to develop the restaurant's design, considering factors such as layout, aesthetics, functionality, and compliance with local building codes and regulations.

During the design phase, RRC Contractors also engaged in value engineering, which involves identifying cost-effective solutions to meet Cafe Rio's goals without compromising quality. This process helps ensure that the project remains within budget.

RRC Contractors handled all the necessary permits and approvals from local authorities. This involved submitting design plans and documents for review and securing the required permits to begin construction legally.

With the design finalized and permits obtained, construction started. RRC Contractors had full oversight on the entire construction process, managing subcontractors, scheduling, and quality control. They kept Cafe Rio updated on the project's progress and addressed any issues that arose.

Throughout the process, quality control and assurance were a top priority for RRC Contractors. They conducted inspections and tests to ensure that the construction adheres to the approved design and meets industry standards for safety and functionality.

Upon completion, RRC Contractors conducted a final walkthrough with Cafe Rio to ensure that all aspects of the restaurant meet expectations, handling any necessary adjustments or finishing touches.
